Chef Mathew Contreras is a proponent of the “Slow Food movement,” providing a  “Provincial American” menu presented in a fresh, stylish and healthy fashion.  Before his current position as Executive Chef at FOODBAR, he came from Lantana Grill at the Hilton Squaw Pea Resort where he held the title of Executive Chef for 3 yrs.  Earlier he held culinary positions for Harrahs Entertainment Group serving as Chef de Cuisine at Agaves, The Corner Grill and the Range Steakhouse.   Previously, he was Sous Chef at Westin Kierland’s Brittle Bush restaurant and earlier held the same position at the Hyatt Compass Room for 3 years.
